After much coaxing we have gotten Linda and Mike to share their much cherished camping bread recipe with the secret ingredient included.This quick and easy recipe is delicious and a real winner when on the road in Africa or around the campfire in Australia. Like most good camp fire breads it uses a can of beer as the magic ingredient!
Ingredients: • 500g self raising flour • 1 generous pinch of salt • 1 can of your favourite beer (room temperature) • ½ handful of sliced jalapenos or pepperdews (When in Africa, and there is a rumour that some Woolworths stock these in Australia) • 1 cup grated cheddar cheese and a little more to put on the top • ½ diced onion • ½ onion cut in thin strips for garnish
Method: 1. Mix the flour, salt, cheese, diced onions and jalapeno / pepperdews in mixing bowl. 2. Slowly add in the can of beer in small pours (No sipping in-between!!) and knead to create a dough like consistency. If you need more liquid add a little milk, water or juice from the jalepeno/pepperdew jar. 3. Place in a well-greased baking tray and garnish with ½ onion and cheese. 4. Place in pre-warmed camper fire oven for 30 to 40 minutes until golden brown. 5. Serve warm with heaps of butter and a cold beer around the campfire!
